here's a recipe for carrots that my family loves - in fact, we just had them for Easter dinner - while not exactly low cal, they are delicious
Easter Carrot Casserole
4 cups carrots cut into rounds 3 Tbsp butter l medium size onion, diced l cup shredded cheddar (orange is best) 3 cups seasoned croutons (garlic and herb is great) l can cream of celery soup
Cook carrots until tender and drain Saute the onions in the butter until tender and translucent Stir the soup into the onions, together with the cheese (don't heat, just mix together) Add the carrots and mix well Pour into a casserole dish and bake at 350 for 20 minutes Pour the croutons evenly on the top and bake for l0 minutes longer (the croutons can be mixed with a little melted butter if desired, but I don't think it's necessary)
