Yeast Free Bread

Basic Quick Bread

3 c. flour
1 Tbls. baking powder
1 tsp. nutmeg
1 1/4 tsp.salt
1 stick butter, softened
1 c. sugar
2 eggs
1 1/2 c. milk
2 tsp. vanilla extract
2 tsp. grated lemon zest (yellow part only)

Combine dry ingredients. In seperate bowl mix butter & sugar together by
hand until creamy. Beat in eggs, then stir in milk, vanilla & lemon
zest. Add dry ingredients & beat with a large wooden spoon until just
combined; don't overbeat. Pour into 2 greased & floured loaf pans. Bake
in a preheated 350' oven 50 minutes or until toothpick inserted in the
center comes out clean. Cool on rack 10-15 minutes then remove from pans
& cool completely.
