Hi, In Tamil it is called "Panju mittaai" sold in streets during festival season. Some look like baadam colour and some in Rose colour. The baadam colour is very tasty. It is also called as soan papdi which is prepared in the form of square pieces instead of loose flakes.

The recipe is:

Ingredients: • 1-1/4 cup Besan (gram flour) • 1-1/4 cup Maida (all-purpose flour) • 1-1/2 cup Water • 2 tbsp Milk • 250 gms Ghee • 2-1/2 cups Sugar • 1/2 tsp Cardamom seeds (crushed coarsely) • 2 tsp Charmagaz • 4 Inches square pieces of thin polythene sheet How to make Soan Papdi: • Mix maida and besan properly. • Take a heavy saucepan and heat ghee in it. • Add flour mixture and roast on low heat until light golden. • Cool a little, stirring occasionally. • Make syrup of sugar, water and milk. • Bring syrup to 2-1/2 thread consistency. • Pour it into the flour mixture. • Beat properly with a large fork until the mixture forms thread like flakes. • Transfer onto a greased surface and roll to 1 inch thickness. • Add the charmagaz seeds and cardamom. Push down with palm. • Cut into 1 inch squares, when cool. • Wrap separately into square pieces of thin polyethene sheet. • Store Soan Papri in an airtight container.

Peechu mithai is just the loose version of Sonpapdi.I am writing the son papdi recipe I follow and you can alter the texture slightly to get the peechu mithai consitency.I guess for peechu mithai they use a special insturment to fluff it. # Step 1

Heat ghee in heavy saucepan. # Step 2

Combine all purpose flour and gram flour and add to saucepan. # Step 3

Stir on low heat until golden brown. # Step 4

Remove from heat and let cool, continuing to stir occasionally. # Step 5

Combine sugar and water in smaller saucepan and bring to a boil. Then add the milk. # Step 6

Strain the mixture when a skin forms on the surface. # Step 7

Continue to boil until thick and stringy. The mixture should form two and a half separate threads when pinched. # Step 8

Pour the sugar syrup into the flour mixture. # Step 9

Beat well until the mixture begins to form flakes. # Step 10

Pour onto greased cookie sheet and roll with rolling pin to 1 inch thickness. # Step 11

Sprinkle with charmagaz and press down lightly with palm. # Step 12

Cut into 1-inch squares. # Step 13

Store in an airtight container. This will make enough for four to eight people
