Serves: 2 people

Ingredients:

Thin Poha (Atukulu) --- 1 cup Salt --- 1/2 tsp Oil --- 1/2 tblsn Mustard Seeds --- 1/2 tsp Peanuts --- 1 tblsn Dalia --- 3 tblsn Curry Leaves --- a few Red Chilly Powder --- 1/4 - 1/2 tsp

Note:

We don't like our poha snack to be sweet. So, I didn't add sugar and raisens to it.

Process:

Add a cup of thin poha into a microwave-safe bowl.

Microwave it for 1 minute.

Give a good mix and again microwave it for a minute. The poha should by crispy and crunchy. Keep it aside.

Add half a tsp of salt in a motar and crush it to a fine powder with the help of a pestle. Keep it aside.

Heat 1 1/2 tsp of oil in a pan. Turn the heat to medium.

Add 1/2 a tsp of mustard seeds and let them splutter.

Add a tblsn of peanuts and fry till done half.

Add 3 tblsn of dalia, curry leaves and 3/4 th of crushed salt too.

Roast dalia till done.

Add a big pinch (half of the 1/4 tsp) to the pan. Stirfry for a while.

Add microwaved thin poha.

Stirfry for 2 minutes till the turmeric is well coated to the poha.

Transfer it to a serving bowl.

Let it come to room temperature and then serve.

Please see this Recipe of Poha chivda(Atukula Mixture)

Ingredients :

Thin Poha – 3 cups, Oil – 2 tbsp, Mustard Seeds – 1 tsp, Curry Leaves – few, Green Chili – to taste (finely chopped), Roasted Chana Daal (Daliya) – 3 tbsp, Whole Raw Peanuts – 3 tbsp, Golden Raisins – 1 tbsp, Turmeric Powder – 1/2 tsp, Citric Acid – 1/4 tsp, Salt – 1 tsp or to taste, Sugar – 1 tsp

Method :

Heat the Poha in the microwave safe bowl for 2 minutes, stirring after 1 minute. Grind the Salt and the Citric Acid to a fine powder. Grind the sugar to a fine powder seperately.

In a non-stick pan, heat the Oil at medium temperature. Once the Oil is hot, add in the Mustard Seeds. Allow them to pop. Add in the Green Chilis and the Curry Leaves and cook for a few minutes. Add in Whole Raw Peanuts and cook for 1 minute. Add in the Roasted Chana Daal and cook for another minute.

Add in the Golden Raisins and cook for 30 seconds. Add in the Turmeric Powder and the Salt & Citric Acid Powder. Mix well. Add the Poha and mix very well till all the Poha is yellow and no white is visible.

Once it is mixed well, turn off the stove and allow it to cool for just 1-2 minutes. Sprinkle the Sugar Powder and mix well.

Allow the Civda to cool down to room temperature before you store it.

Tips:

1. It is best to grind the Sugar.

2. Adjust any or all of the ingredients to your need to suit your requirments.

3. Store it in air tight container or a ziploc for weeks. It does not need to be refrigerated.

Thin atukulu / Aval / Poha - 1 1/2 cup, Cumin seeds - 1 tsp, Channa dal - 1 tsp, Green chillies - 5 to 6 nos, Chilly powder - 1/4 tsp (optional), Curry leaves - 1 tbsp, Fried groundnut - 1 tbsp, Fried cahewnuts , Fried chana dal / Pottukadalai - 1 tbsp, Oil - 1 1/2 tsp, Coconut grated / Dessicated coconut powder - 1 tsp

Method :

Heat oil in the frying pan, add cumin seeds, channa dal, green chillies & curry leaves.

Then add fried chana dal & aval. Fry till crispy.

Finally add the remaining ingredients & fry for 2 mins on low flame. (dont roast too much)

Store it in airtight container.

Ingredients: Atukulu: 3 cups green chillies : 3 (to taste) peanuts : 2 tbs oil: 1 tbs turmeric : pinch salt to taste khuskhus (gasagasalu)(optional) : 1 tsp mustardseeds : 1 tsp curry leaves : 3-4 leaves method

dry roast atukulu for 2-3 minutes in a big pan keep aside

heat oil in the same pan and mustard seeds. when they splutter add curry leaves and green chillies and peanuts fry the for 2 min add salt n khus khus mix well switch of the stove and add atukulu mix well

store in a air tight container after its cooled
