Ganthia (Chickpea Snack)

Ingredients :

1 cup besan 1 tsp salt 1 tsp chilli powder 1 tsp turmeric 1 tsp ajwain oil for deep-frying a sev making machine

Method :

Mix besan, salt, chilli powder, turmeric and ajwain. Add water and mix into a stiff dough.

Place dough in the sev making machine, fixed with a thick sev plate.

Heat oil and press out the ganthia in a circular motion. Turn over and fry till crisp, but avoiding to let it brown.

Lift out of the oil, drain on absorbent paper and store in an airtight jar.

You wil need a ghantia maker or a jhara with large holes

Ingredients :

3 Cup Gram flour 1/4 Tsp Ajwain seeds 1/2 Tsp Khar, (used in papads) 1/2 Cup Oil 3/4 Tsp Salt Oil to deep fry 1 Pinch Asafoetida, 3/4 Cup Water 1/2 Tsp Black pepper coarsely -crushed

Method :

Boil together khar, salt and water, till both dissolve.

Put all other ingredients in a large plate.

Rub oil well into flour.

Pour the hot water and knead -- it should have the consistency of a viscous batter.

Add more water if required.

Heat oil in a large frying pan.

Pour batter into ghantia maker and release it (in strands) over the hot oil. If you have a jhara (a slotted spoon with large holes, try puring batter over this.

Deep fry for 1 1/2 to 2 minutes. Remove with a jhara (slotted spoon) and drain.

Cool completely before storing airtight glass jar.

Serve with tea, coffee, cold drinks, etc.

Making time: 30 minutes

INGREDIENTS

METHOD

Mix besan, salt, chilli powder, turmeric , ajwain in a bowl & add water and mix into a stiff dough.

Place dough in the sev making machine, fixed with a thick sev plate preferable.

Heat oil, once oil is heated, rotate the machine in a circular motion & see that the dough comes in sev form is dropping in the hot oil.

Turn over and fry till its crisp, see to that its not getting brown.

Remove it out of the oil, drain on tissue paper.

I think what you are asking is ghatia recipe from gujarat. It is a very tasty snack there. I am giving you one recipe see if it is the one you want. GHATHIA Ingredients : 1/2 kg. Wheat Flour 11/2 cups. Water 1 1/2 tsp. Ajwain 2 tbsp.. Oil Oil for frying As required Salt according to taste Preparation : Method 1.Sieve the wheat flour and rub the oil into it.Then add the salt, Ajwain and mix well. Make a well in the center, add enough water and knead into a stiff dough. Heat oil in a kadhai, to smoking point. Roll out the dough into big size Chapati and cut it into long strips. Now put these long strips into the hot oil. Remove from the oil when crisp and golden brown in color. Drain on tissue paper , cool and store in airtight containers. half kilo besan 2 cups Maida (optional) 1 teaspoon garlic, pinch of red crushed pepper, salt 1 teaspoon,black pepper crushed, pinch of bicarbonate, 2 table spoons oil, mix with water to form a dough soft enough and not too hard, put it through the hanthia machine, put flat tai on fire and heat the oil in it making sure the oil is about 1 inch lower than the rim of the tai. keep people away, be careful and keep dripping through the ganthia machine, into the oil pan, fry only untill the colour is less than orangish more on the very light brown colour (1 and half minutes) and take it out to the old fafryas
