This recipe is from www.greekcuisine.com… Russian Salad -- Salata Rossiki 1 1/2 cup, boiled and finely cut Potatoes 1/2 cup, dry and boiled Beans 1/2 cup Green Beans 1 cup fresh or canned green peas Peas 1 cup boiled and cut Beets 1/2 cup boiled and cut Carrots 1 tablespoon cubed Pickles 1 tablespoon Capers Parsley 2 -4 hard-boiled Eggs 2 -3 cups Mayonnaise Olives Boil each kind of vegetable separately, drain, let cool and wash very well, using much water (especially for the beet roots). Cut all in small pieces (preferably in cubes) including the eggs, pickles, etc. Keep some beets, carrots, egg slices, pickles and capers for garnishing. Put the ingredients in a bowl, salt and pepper them. Add half of the mayonaise. Place all in a salad bowl or on a platter, giving it a mound-like shape and spread it carefully with the remaining mayonaise. Decorate the surface of the mayonaise with finely cut beets, pickles, parsley, carrots and olives.
Mixed Vegetable (Russian) Salad Peas (boiled salted) ½ cup Carrots (boiled, peeled & chopped) ½ cup Potatoes (boiled, peeled & chopped) ½ cup Spring onions (chopped) ½ cup Cucumber (chopped) ½ cup Tomatoes (chopped) ½ cup Apple (chopped) ½ cup Pineapple (chopped) ½ cup Cherries (deseeded) ½ cup Mustard seeds powder ½ tsp. Castor sugar ½ cup White sauce ½ cup Mayonnaise As required Salt, White paper To taste 1. Boil carrots, peas and potatoes. 2. Peel carrots and potatoes and chop. 3. Chop cucumber, tomatoes, spring onions. 4. Add to a mixing bowl along with the rest. 5. Chop apple and pineapple. Add cherries, salt paper,mustard seeds powder and castor sugar. 6. Ingredients 1/2 watermelon 1 cantaloupe 1 pineapple 1 basket strawberries 5 bananas 4 oranges 2 apples 1/2 cup sugar Cut all fruit into cubes and combine in large bowl. Whatever fruit is left on rinds squeeze into bowl. Pour in sugar and thoroughly mix. Let refrigerate for about two hours until juices are made from fruit. Add some French bread and cheese and this can be supper on a hot day.
Note: Apples grown in Sonoma County are the best. This goes well with fine Sonoma County Wines too!
