nowadays Hindalium and non-stick kadai are better vessels to cook any dish.other than those u can use iron vessels.cooking in iron vessels is good for the health than remaining ones.preparing dishes in copper and alluminium vessels are not good for health.
That is why our ancestors used to cook some special dishes like fried items, pickles etc in the iron vessels.But the iron vessels must be clean and dry when cooking. If any rust is formed, then it is better not to use it.
The Non stick pans that we get in India are Double or Triple coated “Hard anodized” Products. Though I stopped using non stick products now, I have used these type of non stick pans and griddles in both gas and electric stove tops earlier. If we give proper care, the non stick coating remains good for long time. We have to let the pan cool completely before washing. Sinking or Pouring cold water on the hot pan affects the coating. Hand washing the pans also helps in maintaining the coating for long time.
