What is the China grass? How to dissolve it in water?Can you please give me few recipes that I can make with it?

china grass is also called agar agar.its a subsitute for our andhra junnu.Traditionally,Junnu calls for the first day milk after the birth of a calf."China Grass" is a substitute for it .

chinagrass is a substitute for gelatin.

it is tall perennial herb of tropical Asia with dark green leaves;cultivated for the fiber from its woody stems that resembles flax

China Grass is also known as Agar Agar,Faluda,Japanese Moss, Ceylon Moss and Bengal Isinglass.

It is obtained from various seaweeds,has no aroma and has a neutral taste.It is used to make jellies and,because of it's neutral taste,can be flavoured with any essence.

To use China Grass to make jelly,immerse broken strands of China Grass in boiling water to dissolve them.Add Flavouring/Essence and leave to cool and finally set in the refrigerator.

Alternatively,place Chine Grass in a pan of milk,bring to the boil(whilst stirring)and strain to remove any lumps.When cool,add flavourings of your choice(try Sugar,Cardamom Powder etc),pour into a dish and refrigerate until set.When ready to serve,cut into fancy shapes using a cooky cutter and decorate with Almonds or Pistachio Nuts.

in 1 cup hot water add it and boil it melts in water.u should strain that liquid and can use it.u should not pour too much of water for melting it.u'r recipe will be watery if u pour too much water.see my recipe below:

METHOD:in 1 cup hot water add china grass and stir till it dessolves.remove from fire and strain it with a strainer.Boil the milk for 5 minutes by stirring,add the grass water,go on stirring for 5 minutes.Add sugar & elachi powder and mix well.When sugar melts,pour on a greased plate & after 1 0r 2 hours cut into pieces & serve.u can add red or orange colour while boiling milk,if u want.but it is not compulsory.u can also add kaju and cherries after removing that from stove and keep for cooling outside for 1 hour or 2 hours,till it sets completely,till it becomes like slightly hard piece.u can also chill it in refrigirator for 1 hour and serve.

Method:Cook the china grass with a little water on low heat till it melts.Separately,boil together sugar and milk,add the melted china grass(which by now has become transparent)and cook for 5 minutes.Cool and add food colouring and cardamom.Beat the mixture vigorously with electric beater and when it begins to froth,scoop the froth into a bowl.Repeat this process until all the mixture has been beaten.Place in the refrigerator to set and chill.Alternatively,this dessert can also be made without beating the mixture into froth.Instead simply mix and chill.However,the dessert will not be light and fluffy.

Put the double cream,the sugar and the milk into a saucepan. Sprinkle over the agar agar flakes evenly on the surface of the liquid.Place on the heat and bring to the boil-avoid stirring as this will prevent you from assessing whether the flakes have dissolved or not.Simmer for 10 minutes or so on a medium-to-low heat,stirring occassionally until the flakes have disappeared from the liquid.It is important that you cook the mixture until the agar agar flakes are fully dissolved or the China grass will not set.Now boil the mixture fairly hard for 1 minute,being careful not to cause the contents of the pan to overflow.Remove the pan from the heat and add a pinch of cardamom and nutmeg.Pour the mixture into a shallow Pyrex dish or into individual moulds,Sprinkle on the rest of cardamom and nutmeg with the saffron and nuts.Allow the mixture to cool at room temperature and then put in the refrigerator until set,which takes up to 1.5 hours.To serve,cut the mixture into diamond shapes,or serve in the individual moulds.

China grass is another name for agar agar.

Agar agar is a vegetable 'gelatine' derived from a number of seaweeds (Gelidium amansii) which are processed by boiling and drying.

Agar-agar is used as a quick-setting base for many sweets and desserts in Asia. Agar-agar's chief advantage is that it will set without refrigeration and not melt down in tropical heat. It is also used as a finishing glaze.

Agar-agar is more readily available in Asia than gelatine.

Purchasing and storing:

Refined agar-agar is purchased as fine white powder in small packets, or extruded into large square sticks in long cellophane packets. These strands are used, soaked in cold water and softened, as a texture ingredient to supplement the very expensive bird's nest in soups, and also as an addition to cold platters or salads in Chinese cuisine. Dried forms of agar-agar will keep indefinitely in an airtight container.

Preparation:

Quantities should be measured carefully, depending on the result required. Each form of agar-agar needs a different approach. If using powder, sprinkle it over the surface of the measured water in a saucepan, bring to the boil, and it should dissolve in a few minutes of simmering. If using strands or sticks, soak in cold water for an hour, drain, bring to the boil in the measured amount of water and simmer until dissolved. Sugar, flavouring and colouring are added and it sets as a firm jelly without refrigeration, even in tropical climates. It is the base for the famous Almond Bean Curd, Coconut Jelly, Awayuki and numerous other sweets throughout Asia.

Ingredients :

Chopped China grass – 1 Cup Sugar – 2 cups Milk – 1 ½ ltr Almonds ( finally chopped ) – 1 tsp Saffron – little Cashewnuts ( finally chopped ) – 1 tsp.

Method :

Heat a cup of water and dissolve the chopped china grass in the water. Soak it in hot water for an hour. Mash the china grass well. Heat the milk in low flame for 15 – 20 mins . The quantity of the milk should be reduce to half . Milk should become thick. Now add the mashed china grass and sugar , mix well and allow it cook until the grass dissolves completely. Add the fried nuts , saffron and combine well.

Transfer the china grass halwa in to a plate. Once the halwa is set , cut in to pieces . Now the China Grass Halwa is ready to eat.

China grass is also know as agar agar which is a very typical and common gelling agent used in Asia.

Normally, china grass dissolves in boiling water. 2 1/2 cups of water for 1 packet of china grass (I guess its around 10 or 15 grams). Just boil the water and put china grass in it, it will dissolve by itself... u can also stir it.

CHINA GRASS HALWA WITH MILK

INGREDIENTS

China grass -1 cup water -1 cup Sugar -1 cup milk -3 cups

METHOD: Cut the china grass into tiny bits & soak for 10 minutes. Boil the milk, add the grass, go on stirring. Add sugar & mix well . When done, pour on a greased plate & after some time cut into pieces & serve.

CHINA GRASS MILK CAKE

INGREDIENTS:

China grass -1 pocket milk -1 litre tutti frutti - 50gms cashewnuts - 50gms(powdered) cardomem - 5(nos) rose essence - 1tsp food color - little sugar - 200 to 250 gms

METHOD: 1. Cut the china grass into pieces & soak in half cup boiled milk and soak for ten minutes. 2. Heat a vessel with the rest of the milk & boil till it is reduced to half the quantity. 3. Then add the sugar & the soaked china grass & go on stirring. 4. Then add the coarsely powdered cashewnuts, elaichi powder or essence (according to your taste) & food color & mix well. 5. Pour into small ice cream cups, keep for one hour & serve. We can keep in fridge & serve.

Agar Jelly

Put 1/2 ounce agar agar to soak in water for 30 minutes. Drain and add 2 cups boiling water. Let boil gently for about 10 minutes, or until clear. Strain through a fine strainer or cheesecloth and keep hot until ready for use. The jelly should measure 2 cups.

Orange Jelly

1 cup orange juice 6 tablespoons lemon juice 1/2 cup water 2/3 cup sugar 2/3 cup vegetable jelly

Dissolve the sugar in the fruit juice and water, and add the hot jelly. Mix well, pour into wetted molds, and let set.

Lemon Jelly

1/2 cup lemon juice 3/4 cup sugar 1-1/4 cups water 2/3 cup vegetable jelly

Mix and mold the same as the foregoing.

Berry Mold

1-1/2 cups juice from stewed and sweetened berries 1/2 cup sugar 4 tablespoons lemon juice 2/3 cup vegetable jelly

Mix and mold the same as orange jelly.

Fruit Jelly

Arrange a nice assortment of fresh or cooked fruits, well drained, in a glass bowl. Take 1-3/4 cups light-colored fruit juice, add 1/4 cup lemon juice, 1/4 cup strawberry or loganberry juice, and sweeten to taste. Add 2/3 cup vegetable jelly, mix well, and pour over the fruit in the dish. Let set and serve.

Sweet Corn Jelly

Ingredients: : For syrup, bring to boil and strain: 100ml water 100g gula Melaka (Brown sugar) 50g castor sugar 1 pandan leaf - knot

Bottom layer 600ml water 2 tbsp agar-agar powder 50ml thick coconut milk 1/4 tsp salt 100ml UHT milk

For top layer: 125g castor sugar 50ml water 1 1/2 tsp agar-agar powder 200ml thin coconut milk 100g cream-style sweet corn 50ml UHT milk

To make bottom layer Put agar-agar powder and water in a pot and bring to a low boil. Add strained syrup, salt and thick coconut milk. Bring to a boil, then add the milk and turn off the heat immediately. Pour into a wet mould. Leave aside to semi-set.

To make top layer Combine sugar, water and agar-agar powder and bring to a boil. Add coconut milk and sweet corn, and stir well. Lastly, add milk. Pour mixture over half-set bottom layer. Leave aside to cool then chill well before serving.

Agar Agar jelly recipe :

2 hand full of Agar Agar strings. 3/4 cup sugar 2 cups water red food coloring - 2 drop rose water : 2 Tbsp

Soak two handful of Agar Agar strings in 2 cups of hot water for half an hour. Then bring the water and Agar Agar to boil. boil for 10 minutes or till the agar agar is dissolved. Now add sugar and dissolve it. Take the pot off the stove and add rose water and two drop of red food coloring. Now pour it in a big pan and let it set for 1 hour. After that cut it in diamond shapes(like burfi) and serve.

You can make the above recipe with milk too. After soaking the agar agar in hot water, drain it and boil it with 2 cups of milk, proceed as above.

China grass( also called agar) is a product made from a certain kind of algae. It is used to thicken a liquid to make it into a gelatinous or jelly-like substance. In cooking, it can be used to make desserts like pies and puddings.
