china grass is also called agar agar.its a subsitute for our andhra junnu.Traditionally,Junnu calls for the first day milk after the birth of a calf."China Grass" is a substitute for it .
chinagrass is a substitute for gelatin.
it is tall perennial herb of tropical Asia with dark green leaves;cultivated for the fiber from its woody stems that resembles flax
China Grass is also known as Agar Agar,Faluda,Japanese Moss, Ceylon Moss and Bengal Isinglass.
It is obtained from various seaweeds,has no aroma and has a neutral taste.It is used to make jellies and,because of it's neutral taste,can be flavoured with any essence.
To use China Grass to make jelly,immerse broken strands of China Grass in boiling water to dissolve them.Add Flavouring/Essence and leave to cool and finally set in the refrigerator.
Alternatively,place Chine Grass in a pan of milk,bring to the boil(whilst stirring)and strain to remove any lumps.When cool,add flavourings of your choice(try Sugar,Cardamom Powder etc),pour into a dish and refrigerate until set.When ready to serve,cut into fancy shapes using a cooky cutter and decorate with Almonds or Pistachio Nuts.
in 1 cup hot water add it and boil it melts in water.u should strain that liquid and can use it.u should not pour too much of water for melting it.u'r recipe will be watery if u pour too much water.see my recipe below:
China grass -10 grams packet water -1 cup Sugar -1 cup milk -3 cups elachi powder -1 1/4 spoon
METHOD:in 1 cup hot water add china grass and stir till it dessolves.remove from fire and strain it with a strainer.Boil the milk for 5 minutes by stirring,add the grass water,go on stirring for 5 minutes.Add sugar & elachi powder and mix well.When sugar melts,pour on a greased plate & after 1 0r 2 hours cut into pieces & serve.u can add red or orange colour while boiling milk,if u want.but it is not compulsory.u can also add kaju and cherries after removing that from stove and keep for cooling outside for 1 hour or 2 hours,till it sets completely,till it becomes like slightly hard piece.u can also chill it in refrigirator for 1 hour and serve.

Method:First soak china grass in warm water.Boil milk with sugar for 10-15 minutes.Take 1/2 of total milk,bread and china grass and mix it properly.Now mix this mixture with rest of the milk.Grease a bowl with butter and pour the milk mixture into it.Keep it in the oven for 40 minutes.Serve chilled with cashews and cherries.

5 g china grass 1 kg milk 250 g sugar Few drops food colouring ¼ tsp cardamom,coarsely ground Water
Method:Cook the china grass with a little water on low heat till it melts.Separately,boil together sugar and milk,add the melted china grass(which by now has become transparent)and cook for 5 minutes.Cool and add food colouring and cardamom.Beat the mixture vigorously with electric beater and when it begins to froth,scoop the froth into a bowl.Repeat this process until all the mixture has been beaten.Place in the refrigerator to set and chill.Alternatively,this dessert can also be made without beating the mixture into froth.Instead simply mix and chill.However,the dessert will not be light and fluffy.

China Grass(10 gram packet) Milk 4-1/4 cups Ilachi(Cardmom)-6 pods-powdered Peppercorns to taste,coursely ground Fresh fruits for garnish(cherries,berries) Sugar - 2 cups
Boil milk.Wash the china grass in cold water to remove traces of any preservatives.After thoroughly washing,drain the water. When milk starts boiling,add washed and drained china grass.The china grass melts in the boiling milk in 4 to 5 minutes.After adding china grass,add two cups of sugar and stir constantly. After china grass and sugar melts,add cardamom power and ground pepper. Stir well for a few seconds and remove the vessel from fire.Allow the mixture to cool a little.Pour the mixture into sevearl small molds or cups,or in a larger vessel.You can also pour the mixture into a deep plate,and cut it into squares or diamonds after it becomes solid.Place fruits on top of the mixture and put in refrigerator to chill.In about one hour,the mixture should solidify like ice cream.After it becomes solid,it will not melt like ice cream.

300ml(10 fl oz) Double Cream 4 tbsp Sugar or to taste 500 ml Whole Milk 2 tbsp Agar Agar Flakes 2 pinches Ground Cardamom 2 pinches Ground Nutmug 2 pinches Ground Strands 2sp Almonds slivered 2 tsp Pistachios slivered
Put the double cream,the sugar and the milk into a saucepan. Sprinkle over the agar agar flakes evenly on the surface of the liquid.Place on the heat and bring to the boil-avoid stirring as this will prevent you from assessing whether the flakes have dissolved or not.Simmer for 10 minutes or so on a medium-to-low heat,stirring occassionally until the flakes have disappeared from the liquid.It is important that you cook the mixture until the agar agar flakes are fully dissolved or the China grass will not set.Now boil the mixture fairly hard for 1 minute,being careful not to cause the contents of the pan to overflow.Remove the pan from the heat and add a pinch of cardamom and nutmeg.Pour the mixture into a shallow Pyrex dish or into individual moulds,Sprinkle on the rest of cardamom and nutmeg with the saffron and nuts.Allow the mixture to cool at room temperature and then put in the refrigerator until set,which takes up to 1.5 hours.To serve,cut the mixture into diamond shapes,or serve in the individual moulds.
