| Cooking procedure: |
Halve cashew nuts and keep aside.
In a large skillet, on less than medium, heat
butter and when slightly melted, add cashew nuts
and sugar. When sugar melts and turns brown, add
rice and fry for 5 minutes on high heat. Then add
water and salt and let it come to a boil. Lower
heat and let it cook until the water content
decreases to less than half. Then add milk and
simmer on low heat. Simmer until all liquid is
absorbed. |

This is a very easy and aromatic rice dish. Milk
makes rice look very white ("looks like jasmine
flower", that is, the rice is as white as the
flower- as they say in my village).
This rice goes best with curries which are rich
in taste. Additionally, you can add a cardamom to
the boiling rice. |
