Side Dish : Baingan Bharta

Number of servings: 4

List of ingredients:
4 - 5 brinjals  
2 cups onions chopped  
1 cup tomato chopped  
1 clove garlic, finely chopped  
1 inch ginger finely chopped  
1 spoon red chillies  
1 spoon dhaniya powder  
1 spoon garam masala  
½ spoon turmeric powder  
1 cinnamon stick  
2 cloves  
2 red chillies  
a little lemon juice  
a little ghee  
salt to taste  
1 spoon ghee  
1 spoon jeera  
1 spoon mustard seeds  
2 spoons red chilli powder  

Cooking procedure
Lightly coat the brinjals with oil and place in a microwave proof container and microwave on high for 5 – 6 minutes. You can also bake them in the oven at 400 degrees for 20 - 30 minutes. Or you can hold the brinjals with the stem, and hold them over the flame to cook them.

When done, let cool and remove the skin and make a fine puree of it. Heat ghee in a kadai, add ginger, garlic and fry. Now add your onions, garam masala, dhaniya powder, turmeric, red chilies, cloves and cinnamon stick and fry till the onions get golden brown. Now add your tomatoes and brinjal paste and fry till they are all well cooked. Now add yor lemon juice and stir. Take some ghee in a small pan, add the jeera, mustard seeds and chilli powder. When the mustard begins to crackle, pour this into your bhartha. That is it, your baingan bhartha is done.
