Side Dish : Mixed Vegetable Curry (Microwave Recipe)

List of ingredients:

1 cup mixed vegetables  
¼ cup chopped onions  
¼ cup chopped tomatoes  
2 spoons chilli powder  
1 spoons ginger minced  
1 spoons garlic minced  
salt  
Popu (seasoning)
4 - 5 spoons oil  
½ spoon chana dal  
½ spoon urad dal  
½ spoon jeera  
½ spoon mustard seeds  
a pinch turmeric  

Cooking procedure
Take a microwave proof container, add the mixed veggies, some water and cook them on high. Remove, drain the excess water and keep aside.

Take a large microwave proof vessel, add oil and microwave till hot.Add all the ingredients under Popu(Seasoning).

When the mustard seeds begin to splutter, add the chopped onions and microwave till golden brown. You will have to keep mixing once in 4 – 5 minutes to make sure the onions don’t get charred.

Now add your tomatoes and microwave till well cooked.

Add salt, cooked vegetables, ginger, garlic and chillies, mix well and microwave for 5 – 6 minutes. That is it, your mixed vegetable curry is done.

Goes well with chapattis, parathas, poori or even ghee rice.
