| Mix besan, rice flour, sugar, salt, chilli powder and ginger together. Heat some oil in a kadai and add a few spoons of hot oil in the mix. Now make a nice thick batter with enough water. Dip your potato slices in this batter, so that they are coated well and fry them in oil till done. |

| Adding rice flour to the batter will make your bajjis crisp and also ensure that they don’t
drink too much oil. Hot oil and sugar also make your bajjis crisp. If you want your bajjis to be nice and fluffy you can add a pinch of soda bi carb to your batter. You can make bajjis with any vegetable that you want. |
