This sambhar goes well with rice, idli or
wada. |

| size of a large lemon | tamarind | |
| 1 cup | toor dal | |
| ¼ cup | fresh grated coconut | |
| 10 spoons | sambhar powder | |
| 4 - 5 spoons | jaggery | |
| a pinch | asafoetida (hing, inguva or perungayam) | |
| Popu (seasoning) |
| 4 spoons | oil / ghee / butter | |
| ¼ spoon | turmeric | |
| 1 spoon | mustard seeds | |
| 1 spoon | urad dal | |
| 1 spoon | methi seeds | |
| Cooking procedure |
| Soak tamarind and make a juice and throw out the pulp. Take a big microwave proof vessel, pour
1 cup water, add a little asafetida and the cut vegetables, and let them cook well. At the
same time, you can take another small microwavable vessel and cook the dal in it. I will have
to warn you, that it will take much longer than when cooked in the cooker. The vegetables will
get cooked first. Take them out and let the dal cook. When both have cooked well, add the dal
in the vessel with the veggies, add the tamarind juice, grated coconut, sambhar powder & salt.
microwave for about 15 minutes. You will have to keep mixing it once in 5 or 6 minutes. Take
this out. In a small container, add 2 spoons oil, and microwave till hot. Keep methi seeds,
urad dal and mustard handy. When the oil is hot, remove, add all the above ingredients and
again microwave for about 20 – 30 seconds or till the mustard begins to splutter. Add this to
your sambhar and microwave for about 5 minutes. Your sambhar is done. |
