Breads : Mooli Paratha

Best when hot. Can be served along with
sliced onions, tomatoes and cucumber
seasoned with a little lemon juice. |
| List of ingredients: |
| Qty | Measure | Ingredient | Wt.(gms) |
| 2 cups | wheat flour | |
| ¼ cup | finely chopped mint leaves | |
| ½ cup | finely chopped cilantro/coriander leaves/parsley | |
| 3 spoons | minced ginger | |
| 1 | green chilli minced | |
| 1spoon | chilli powder | |
| 1spoon | garam masala | |
| 1spoon | amchur powder | |
| 3 - 4 spoons | butter / oil / ghee | |
| Cooking procedure |
| Mix the wheat flour, garam masala, amchur and salt. To this add radish, mint, coriander,
ginger, chilli and butter. Make a nice thick dough using enough water. I prefer using warm
water. Cover and leave it for about 2 hours. Knead the dough again and divide it into lemon
size balls. Roll each ball using a rolling pin into flat round parathas. Heat you tawa and
place your paratha on it. Add a little butter and let it cook well. Turn and let it cook on
the other side. Serve hot with any side dish of your choice. |

| Goes well with any raita, or any gravy or dry side dish. Fabulous with pickes. |
