Italian : Herb and Garlic Pizza Base

Preparation time: 2 hrs 30 min
Number of servings: 2

  This pizza base has herbs, and hence adds a nice touch of flavour to your regular pizza.  

List of ingredients:
½ cup warm water  
1 package active dry yeast  
3 cups all purpose flour  
½ spoon salt  
1 spoon sugar  
2 spoons finely chopped oregano  
2 spoons finely chopped basil  
2 spoons finely chopped cilantro  
2 spoons finely chopped time  
2 spoons finely chopped dill  
2 spoons minced ginger  
1 spoon minced capers  
2 - 3 cloves of garlic minced  

Cooking procedure
Add the dry yeast in warm water, mix and leave it for sometime to foam. Take flour in a large bowl, add salt and sugar and mix. Make a depression in the middle and pour in the yeast, all the herbs and water and make a nice dough. Add a few spoons of olive oil if you want to. Knead the dough well; add a little more flour if needed and make sure the dough does not stick to your hands. Cover and place in a warm place for about 1 hour, or till the flour has risen considerably. Press the dough with your hands to deflate it, and knead again for sometime. You will notice that the dough has become quite soft now. You can either stretch the dough or use a rolling pin to make your pizza base.
Any additional information:
It is OK if you don’t have all the herbs mentioned. You can use 5 spoons finely chopped oregano, and 5 spoons chopped basil instead. But it is necessary to add ginger and garlic.
