Dessert : Coconut Burfi ( Lascora )

Number of servings: 5

List of ingredients:
2 cups grated coconut  
½ cup sugar  
a little water  
a handful cashews  
5 - 6 spoons ghee  

Cooking procedure
Heat 3 spoons ghee in a pan and fry the coconut till light brown. Remove from heat and keep aside. Heat water in a deep pan and add sugar, and stir. Take a little of the syrup in your hand between your pointing finger and thumb. The syrup should expand without breaking. If your syrup reaches this consistency, add the grated coconut and cook for sometime. Add the remaining ghee and stir till the ghee dissolves. Remove from heat and pour this over a broad vessel greased with ghee. Let it cool and cut into tiny diamonds. You can also make them into laddus instead.
