Snacks : Crispy Onion Pakodas

This is one of my favorite snacks. In fact this is the first thing that I learnt when i started cooking. This is a great snack and extremely easy to make, and is great for any occasion or no occasion. Goes well with any chutney or even plain old tomato ketchup. |

| 3 cups | onions chopped long and thin | ||
| 4 - 5 spoons | rice flour | ||
| 5 spoons | chilli powder | ||
| 1 spoon | jeera | ||

| 1/4 cup to 1/2 cup | besan | ||
| Cooking procedure |

| Put your onions in a large container. Add a little besan, the rice flour, chilli powder, salt and jeera. Heat oil in a deep pan. When the oil is hot, add a few spoons of this oil in the onion mixture. Now mix all this together. Add a little water. Do not add too much water, as the onions will let out water. The batter should be thick. There should not be too much besan either. There should be just enough to lightly coat the onions. Now fry this in small batches in oil till brown. When cooked, remove them onto paper towels to absorb excess oil. Serve hot with pudina chutney or coconut chutney or any chutney of your choice. |

| You can increase the amount of besan added if you want to, but if you keep the besan at a minimum, your pakodas will be crisp. Apart from that adding rice flour will not only make them crisp, but will also keep them from drinking too much oil. A few people add ½ a spoon of sugar to make it extra crisp. |
