Side Dish : Carrot Kobbari Koru

Number of servings: 4


List of ingredients:
1 cup freshly grated coconut  
1 cup grated carrots  
salt to taste  
Popu (seasoning)
4 - 5 spoons oil  
½ spoon chana dal  
½ spoon urad dal  
½ spoon jeera  
½ spoon mustard seeds  
4 - 5 curry leaves  
4 - 5 red or green chillies  

Cooking procedure
Heat oil in a pan, add chana dal, urad dal, jeera and mustard seeds, when the mustard seeds begin to splitter, add the green chillies, red chillies and curry leaves. When the chillies get a little brown, add salt, carrots and fry till cooked. Add grated coconut. Stir for about 5 mins. When the coconut gets slightly golden brown, your side dish is done. Serve hot with plain rice and ghee, or sambhar rice.
Any additional information:
This dish can be done with beetroot, cabbage, peas or beans as well.
