Dessert : Annam Paravanam (Rice and Milk Pudding)


Number of servings: 4


A simple rice and milk recipe, sweetened with some jaggery (molasses). Makes a lovely treat for any occasion.  

List of ingredients:

1 cup washed and dried plain rice  
1 cup ghee  
4 cups milk  
½ cup jaggery  
5 - 6 strands of saffron (optional)  
Garnish
5 spoons ghee  
a handful cashews  
a handful sliced almonds  
1spoon cardamoms (optional)  

Cooking procedure
Heat the ghee in a deep pan, add the rice and mix till the rice is well coated with the ghee. Slowly pour the milk and keep stirring. Add the saffron, close, and let it cook for some time. Remove lid and stir again. Let it remain uncovered, and occasionally stir. Do so until the rice is well cooked and the milk has thickened considerably. Make a fine powder of the jaggery and slowly add, and simultaneously keep stirring. You can either increase or decrease the amount of jaggery; depending on how sweet you want it. At this point it is necessary that you keep stirring so that no lumps are formed. When the jaggery is well incorporated and the pudding is quite thick, remove from heat. Take 5 spoons of ghee in a small pan, fry the cashews and almonds till slightly brown and add this to the paravanam. If you like cardamoms and raisins, add that too. Serve in small cups at room temperature.
Storage tips:
Refrigerate after 8 hours
Any additional information:
You can also add sugar instead of jaggery. The taste will not be the same, but it will still taste good.
