Rich Caramel Sauce

|500 ||g ||sugar ||
|250 ||ml ||water ||
|1 ||teaspoon ||lemon juice ||
|250 ||ml ||heavy cream ||
|1. Over medium heat, stir the sugar, water and lemon juice until dissolved.
2. Without stirring, let it boil until it caramelizes to a rich amber color.
3. Heat the cream, then whisk into the caramel in a thin, steady stream.
4. Serve warm, at room temp or refrigerate in a covered jar for up to 3 weeks.|
