500 g sugar  
250 ml water  
1 teaspoon lemon juice  
250 ml heavy cream  

Cooking procedure
1. Over medium heat, stir the sugar, water and lemon juice until dissolved. 2. Without stirring, let it boil until it caramelizes to a rich amber color. 3. Heat the cream, then whisk into the caramel in a thin, steady stream. 4. Serve warm, at room temp or refrigerate in a covered jar for up to 3 weeks.
