Lemon Squares

Number of servings: 40

List of ingredients:
250g sifted all purpose flour  
75g powdered sugar  
1/4 teaspoon salt  
1 teaspoon finely grated lemon zest  
225g unsalted butter  
Lemon Filling:
6 eggs  
750g sugar  
125ml lemon juice  
2 teaspoons finely grated lemon zest  
1 teaspoon lemon extract  
50g all purpose flour  
1 1/2 teaspoons baking powder  
powdered sugar for dusting  

Cooking procedure
1. Preheat oven to 350 F or 180 C 2. To make the crust, mix the flour, sugar, salt and lemon zest. 3. Process with the butter to a coarse meal and press into a lightly oiled 13 X 9 baking pan. 4. Bake for 10 to 15 min or until the edges are lightly brown. 5. To make the filling, beat the eggs, sugar, juice, zest and extract until creamy. 6. Sift the flour with the baking powder and stir into the egg mixture until well blended. 7. Pour on to the crust and bake for 30 to 40 min or until the center is set. 8. Cool, then dust with powdered sugar, cut into small squares.
