This snack is made for all the festivals in the south.Every south Indian cuisine restuarant serves this snack.  

List of ingredients:

half cup urid dal  
2 tablespoon rice  
2 teaspoon chopped green chillies  
1/2 teaspoon cumin seeds powder  
1/8 teaspoon asafoetida  
1 teaspoon chopped curry leaves  
1 teaspoon chopped coriander leaves  
1 onion finely chopped  
salt to taste  

Cooking procedure
Soak dal in water for 30 to 45 minutes.

Wash rice and drain the water and let it soak in the washed moisture.

Dry grind the rice and keep aside.

Grind the dal in wet grinder or mixie adding a teaspoon of water now and then.

The batter should be fluffy.

Transfer the batter to a vessel and add salt ,green chillies,onions,curry leaves ,coriander leaves ,asafoetida, cumin powder and rice powder.

Wet your palms,take a ball of the above batter and make vadai shapes as shown in the picture and deep fry in oil.
Storage tips:
Vadai should be eaten fresh.
Any additional information:
Goes well with sambar or any chutney.Coconut chutney will be the best.

You can omitt the onions,green chillies ,curry leaves and coriander leaves and add 1/2 teaspoon of pepper in the above procedure.

Take atmost care that the batter should not be waterey and at the same time it should not be very hard and thick.

If it has become too watery then add a teaspoon rice powder and if too thick add one tablespoon of water.
