Sambar Rice

| 1/8 teaspoon | asafoetida | ||

| one cup | mixed vegetables of your choice | ||
| like carrots,peas,potatoes | |||
| one small lemon size | tamarind | ||
| one tablespoon | oil | ||
| one tablespoon | ghee | ||
| Cooking procedure |

| Cook the dal and rice seperately . Cut the onions into thin slices. Soak tamarind and extract pulp. Cut the vegetables. Heat little oil in a kadai ,fry the red chillies,channa dal ,dhania,fenugreek and coconut one by one. Dry grind this to a coarse powder. Heat the remaining oil in the kadai and fry the onions,then the vegetables and curry leaves. To this add salt,turmeric powder and tamarind pulp. Boil untill the vegetables are done. One teaspoon of sambar powder can be added in that case red chillies should be reduced to half. Mash the rice well and mix it with the dal.Add this to the vegetable mixture. If it is very thick you can add water. Bring the above mixture to a boil and remove from fire . Add the powder andasafoetida . Finally season in ghee the mustard. Garnish with fresh coriander leaves. |
