Lemon Rice

Lemon Rice
This is lime flavoured rice preparation of South India. It is easy to make and good for any parties .  

List of ingredients:
For the rice.
2 cups rice  
2 red chillies  
2 green chillies  
2 tablespoons juice of lime  
2 teaspoons salt  
1 teaspoon nustard  
1 teaspoon channa dal  
1 teaspoon sesame oil or gingely oil  
1 teaspoon cooking oil  
1 teaspoon ghee(optional)  
1 teaspoon curry leaves  
1 teaspoon turmeric powder  
1/4 teaspoon asafoetida  

Cooking procedure
Cook the rice,care should be taken not to overcook the rice.

It is better to cook the rice in a vessel and strain the water instead of pressure cooking.

Once the rice is cooked transfer it to a wide vessel to cool it.

Heat oil in a kadai .

Season it with mustard,when it splutters add the channa dal, red chillies , green chillies , curry leaves, turmeric powder and asafoetida.

Mix this mixture to the rice with salt.

Add the lime juice when the rice is completely cold .

Garnish with fresh coriander leaves.
Any additional information:
You can fry some cashew or ground nuts and add it to the rice.

You can also fry 2 tablespoon of onion in oil and add to the rice.

A 1/2 teaspoon of ginger garlic paste can also be added if onion is used.

Fry in little oil 1 red chillies,1/4 teaspoon dhania and 4 or 5 fenugreek and dry grind it and add to the rice at the end.
