Special Sambhar

This is the special Sambar made for special occasions,parties etc. It is also called araithuvitta sambar. |

| 2 | tsp | sambhar podi | |
| 1 | tsp | mustard seeds | |
| 5 | nos | fenugreek seeds | |
| 1/4 | tsp | asafoetida | |
| 2 | tsp | oil | |
| 2 | tsp | salt | |
| Fry in little oil in the order given and dry grind the following | |||
| 1/2 | tbsp | coriander seeds | |
| 1/2 | tbsp | bengal gram dhal | |
| 5 | nos | red chillies | |
| 1 | tbsp | scraped coconut | |
| Cooking procedure |

| Cook the dal in pressure cooker untill very soft. Soak tamarind in water and extract pulp. Cut the onions into thin slices. Cut the vegetables and keep aside. Cut the tomatoes into 6 pieces. Heat oil in the kadai. Season with mustard seeds and fenugreek . Add the onions and fry for few minutes. Now add the vegetables,salt, and the sambhar podi and mix well. To this add the tamarind pulp and the tomatoes. Cook untill the vegetables are cooked. Now mash the dhal and add to the cooked vegetables and bring to boil untill it becomes a thick gravy. Remove from fire and mix in asafoetida ,curry leaves and fresh coriander leaves. Finally add the dry ground mixture |
| Storage tips: |
| Dry mixture can be ground in large quantities and stored in the refrigerator in an airtight container.This can be used whenever sambhar is made. |
