Special Sambhar

Number of servings: 4

This is the special Sambar made for special occasions,parties etc. It is also called araithuvitta sambar.  

List of ingredients:
1/2 cup red gram dhal  
1 cup water  
1 small lemon sized tamarind  
1/4 cup chopped onion  
2 medium sized tomatoes  
1 cup vegetables like drumstick,okra,pumpkin,  
2 tsp sambhar podi  
1 tsp mustard seeds  
5 nos fenugreek seeds  
1/4 tsp asafoetida  
2 tsp oil  
2 tsp salt  
Fry in little oil in the order given and dry grind the following
1/2 tbsp coriander seeds  
1/2 tbsp bengal gram dhal  
5 nos red chillies  
1 tbsp scraped coconut  

Cooking procedure
Cook the dal in pressure cooker untill very soft.

Soak tamarind in water and extract pulp.

Cut the onions into thin slices.

Cut the vegetables and keep aside.

Cut the tomatoes into 6 pieces.

Heat oil in the kadai.

Season with mustard seeds and fenugreek .

Add the onions and fry for few minutes.

Now add the vegetables,salt, and the sambhar podi and mix well.

To this add the tamarind pulp and the tomatoes.

Cook untill the vegetables are cooked.

Now mash the dhal and add to the cooked vegetables and bring to boil untill it becomes a thick gravy.

Remove from fire and mix in asafoetida ,curry leaves and fresh coriander leaves.

Finally add the dry ground mixture
Storage tips:
Dry mixture can be ground in large quantities and stored in the refrigerator in an airtight container.This can be used whenever sambhar is made.
Any additional information:
This is good for rice,idlli,dosai and vadai.
