Coconut Rice (Tamilian Style)

Coconut Rice is one of the easy dishes that
can be made for a quick bite or a quick
dinner when you are too tired to make
something elaborate. It has a very tasty
flavor to it and is usually made in
tamilian homes either for breakfast or
during special functions. |

| 2 | cups | rice | |
| 11/2 | cup | fresh grated coconut | |
| 1 | tsp | salt (or to taste) | |
| For the seasoning: |
| 2 | tbsp | oil | |
| 1 | tsp | mustard seeds | |
| 1 | tsp | urad dal | |
| 1 | tsp | channa dal | |
| 1 | tsp | cashew nuts | |
| 5 | in number | curry leaves | |
| 1 | pinch | asafoetida (hing) | |
| 4 | in number | dry red chillies (broken into pieces) | |
| 1/2 | tsp | chopped green chillies | |
| Cooking procedure |
| Method:
Boil the rice with water in a heavy bottomed pan or a rice cooker until done. If boiling in a heavy
bottomed pan, drain the water, spread on a large plate and cool. Use the ratio of 1 cup rice to 1.5
cup water.
In a pan, heat the oil. Add the asafoetida and mustard seeds. When the seeds splutter add the two
dals and saute until light brown. then add the remaining seasoning ingredients and fry until cashews
are golden brown. Then add the grated cocunut, stir for a minute and then add the cooked rice and
salt and mix well. Serve hot. |
