Chutneys/Pachhadis (Gourd/squash skins)

If you know people from Andhra they can make a chutney from almost any vegetable. My mom makes lots of chutneys from skins of vegetables. (Squash, gourds). This recipe also can be made with coconut instead of the vegetable skins.  

List of ingredients:

1 Cup vegetable skin grate (washed and drained)  
1 Tablespoon chana dal (split peas)  
1/2 Teaspoon cumin seeds  
1/2 Teaspoon coriander seeds  
2 redchillies  
1 inch strip of tamarind  
salt to taste  
aestofoda  
few seeds of fenugreek  

Cooking procedure
1. Roast the vegetable grate a little brown using 1/2 teaspoon oil. Let it cool. Add salt and tamarind to this.

2. Dry roast all other ingredients. Let them cool.

3. In a blender powder the dry roasted ingredients. Now add 1/5th cup of water. Add the vegetable. Grind to fine paste.

Tastes good with almost any of the Indian menus.
