Chutneys/Pachhadis (Gourd/squash skins)

If you know people from Andhra they can
make a chutney from almost any vegetable.
My mom makes lots of chutneys from skins of
vegetables. (Squash, gourds). This recipe
also can be made with coconut instead of
the vegetable skins. |
| List of ingredients: |
| Qty | Measure | Ingredient | Wt.(gms) |
| 1 | Cup | vegetable skin grate (washed and drained) | |
| 1 | Tablespoon | chana dal (split peas) | |
| 1/2 | Teaspoon | cumin seeds | |
| 1/2 | Teaspoon | coriander seeds | |
| 2 | | redchillies | |
| | 1 inch strip of tamarind | |
| | salt to taste | |
| | aestofoda | |
| | few seeds of fenugreek | |
| Cooking procedure |
1. Roast the vegetable grate a little brown using 1/2 teaspoon oil.
Let it cool. Add salt and tamarind to this.
2. Dry roast all other ingredients. Let them cool.
3. In a blender powder the dry roasted ingredients. Now add 1/5th cup
of water. Add the vegetable. Grind to fine paste.
Tastes good with almost any of the Indian menus. |
