Chutneys/Pachhadis (Gourd/squash skins)
| If you know people from Andhra they can
make a chutney from almost any vegetable.
My mom makes lots of chutneys from skins of
vegetables. (Squash, gourds). This recipe
also can be made with coconut instead of
the vegetable skins.
|List of ingredients:|
|1 ||Cup ||vegetable skin grate (washed and drained) ||
|1 ||Tablespoon ||chana dal (split peas) ||
|1/2 ||Teaspoon ||cumin seeds ||
|1/2 ||Teaspoon ||coriander seeds ||
|2 || ||redchillies ||
| || ||1 inch strip of tamarind ||
| || ||salt to taste ||
| || ||aestofoda ||
| || ||few seeds of fenugreek ||
|1. Roast the vegetable grate a little brown using 1/2 teaspoon oil.
Let it cool. Add salt and tamarind to this.|
2. Dry roast all other ingredients. Let them cool.
3. In a blender powder the dry roasted ingredients. Now add 1/5th cup
of water. Add the vegetable. Grind to fine paste.
Tastes good with almost any of the Indian menus.
