Mint Pulav (Spicy Rice dish made with mint leaves)

Mint Pulav is a easy tasty rice dish that I
learnt after experimenting with a number of
spices. And one point I got it just right
and I have stuck with that recipe ever
since. This dish is an easy dish to make
for parties. The taste can be varied to
make it spicire if needed.

| 2 | pods | garlic | |
| 1 | inch | cinnamon stick (dal chini) | |
| 2 | in number | cloves | |
| 1 | in number | onion (chopped lengthwise) | |
| 1 | tbsp | coriander (cilantro) leaves | |
| 1/2 | cup | fresh grated cocunut (or use cocunut pieces) | |
| 1 | tsp | cumin seeds | |
| 3 | tbsp | oil | |
| 2 | tsp | salt (or to taste) | |
| Cooking procedure |
| Method:
Cook the Basmati rice in a rice cooker or a heavy bottmed pan. Use the ratio 1 cup rice to
1.5 cup water. Wash the cauliflower florets and blanch in hot water (or boil for 5 minutes
with a little water in a microwave). Also boil the green peas for about 10 minutes or
until tender. In a small pan, fry the mint leaves and green chillies in 1/2 tsp of oil.
Then add the cocunut, garlic, cloves, cinnamom and cilantro to this mint and green
chillies and grind to a smooth paste with 1/2 cup of water. Grind until smooth and fine.
In a big pan or wok, heat the oil, add the cumin seeds, then add onions and saute until
golden brown. Add the ground masala paste and cook for about 10 minutes. Add 1/2 cup
water, boiled green peas and cauliflower florets and cook until raw smell of masala goes
(or for 15 minutes) or until the oil leaves the sides of the pan and all water is
evaporated. Add the cooked rice and salt and mix thourougly. Mix gently so that the rice
grains do not break. Serve hot with raita. |

| Tastes best when fresh. Great lunch box idea. If refrigerated, Re-heat before serving. |
| Any additional information: |
| To bring out the flavor of mint more, add another 1/2 cup of mint leaves. You can also
serve this by garnishing it with 'French fried onions' or 'Potato sticks'. They are
normally available here in the US in all grocery stores. |
