Dal Fry

I usually make this with rotis. I make
this with Toor Dal (arhar dal). |

| 1 | Cup | dal (arhar / toor). | |
| 1 | Teaspoon | cumin | |
| 2 | Teaspoon | butter/ghee | |
| 1/2 | inch piece | ginger (mashed/julianeed) | |
| 4 | cloves | garlic (mashed/julianned) | |
| 1 | | onion (cut to small pieces) | |
| | curry leaves (couple strands) | |
| 1/2 | Teaspoon | turmeric | |
| 1/2 | Teaspoon | chilli powder | |
| Cooking procedure |
1. Boil the Dal in two cups water in the pressure cooker (6 minutes
after hissing sound).
2. In a hot pan heat the butter/ghee. Add Jira, garlic and ginger.
Let them cook. Add the Onions and roast for no more than 3 minutes.
It should not be brown. They should remain white but slightly cooked
and crunchy. Add all other seasonings.
3. Now add the cooked dal. Enough water to make it soupy. Now add
salt. Bring to boil and let it froth for a minute. Cover and let it
set for a few minutes and serve with Rotis/Rice.
