Quesadillas (Desi Style)

Well I have fallen in love with this mexican dish. But I have done a little variation and it is fun. Give it a try

Preparation time ([days] hrs:min): 00:10

Cooking time ([days] hrs:min): 00:10

No. of servings: 8

List of ingredients:

  • 8 flour tortillas (large)  
  • For the filling
  • 1 cucumber (shred to fine pieces)  
  • 2 carrots (pealed and shreded to fine pieces)  
  • 3 boiled potatoes (shreded to fine pieces)  
  • 2 tomatoes (shreded to fine pieces)  
  • 2 onions (shreded to fine pieces)  
  • 1 cup halopenos / green peppers (shredded)  
  • 1 bunch spinach (shredded)  
  • 1 bunch cilantro or hara dhania(shredded)  

Cooking procedure:

1. Mix all the filling ingredients (you may want to reduce the cheese) except the chillies.

2. Butter (oil/spray cooking oil) on each of the tortilas on one side each.

3. On a hot pan place a tortilla with its buttered side on the pan. Top with the filling. Sprinkle some salt to taste. Bring the heat to med-low. Cover with a tortilla with its unbuttered side over the filling.

4. When the quesadilla is cooked turn to the other side with a large spatula. Cook til med brown and cut into triangles and serve with mexican salsa or any of the Indian chutneys.

Works great either as a snack or a meal.

Additional Info:

You may want to use any kind of vegetables for fillings. The Mexican Quesadillas are loaded with cheese. I have substituted a portion of the cheese with potatoes.
