Pav Bhaji

Pav Bhaji is a delicious chaat item that is usually served as a tea-time snack. This dish is easy to make and can be even made for dinner or lunch.

Pav Bhaji

List of ingredients:

  • Ingredients:
  • 12 in number pav (square shaped hamburger buns)  
  • 3 in number tomatoes  
  • 2 in number potatoes (boiled, peeled and mashed)  
  • 3 in number green chillies (grind into paste)  
  • 2 in number onions (grind into paste)  
  • 1 in number onions (chopped fine)  
  • 1 stick butter (or 100 gms butter)

  • 2 cups mixed vegetables (french beans, carrots, cauliflower, peas - all chopped fine into small cubes except peas)  
  • 2 tbsp cilantro (or coriander leaves)  
  • 2 tsp red chilli powder  
  • 1 tsp ginger-garlic paste  
  • 1 tsp garam masala powder  
  • 1 tsp dhaniya powder  
  • 1 tsp cumin seeds (jeera)  
  • 1/2 tsp haldi (turmeric powder)  
  • 1 tsp salt (or to taste)  
  • 1/2 tsp sugar  

Cooking procedure:

Method: Step 1: Heat half the butter in a frying pan and add cumin seeds and green chillie paste. Saute for 2 minutes and add onion paste, ginger-garlic paste, all vegetables, tomatoes and potatoes. Cook till very soft, constantly stirring, and adding water and mashing from time to time. Step 2: When almost cooked and well mashed, add some more butter, chilli powder, garam masala, dhaniya powder salt and sugar. Mix well. Cook for another 5 more minutes and store aside. Step 3: Slit the bread horizontally into two portions joined to each other along one long edge. Smear with remaining butter and grill or fry on a tava on both sides. Step 4: To serve, place toasted pav, bhaji, two lemon pieces and garnish with chopped raw onion and cilantro.

Storage Tips:

Bhaji can be made previous day and refrigerated if making for a party.

Additional Info:

You may add readily available Pav Bhaji masala instead of garam masala and dhaniya powder. This powder is available in most Indian stores here in the US and almost any store in India. The various brands are MDH, Everest, MTR etc.
