Mango Chitranna (Karnataka Sytle Mango Rice)
Mango Chitranna is an easy tasty rice dish. Chitranna basically in Kannada means Lemon rice or yellow rice. Mango chitranna is an improvised version that uses the raw and sour tatse of the mango to give flavor to the rice.

List of ingredients:
- 3 cups basmati rice (cooked, us ethe ratio 1 cup rice to 1.5 cup water)
- 1 in number raw mango - grated
- 1/2 in number onion - chopped fine
- 5 in number green chillies - chopped lengthwise
- 4 in number curry leaves
- 1/2 tsp mustard seeds
- 1/2 tsp channa dal
- 1/2 tsp urad dal
- 1/4 tsp turmeric (haldi) powder
- 2 tbsp oil
- 1 tsp salt (or to taste)
- 1 tbsp coriander (cilantro) leaves - chopped
Method: Cook rice in a rice cooker or in heavy bottomed pan. Allow to cool and spread on a big plate or platter. In a pan, heat the oil. Add mustard seeds. When they splutter add channa dal, urad dal and curry leaves. When the dals trun light brown add the green chillies and onions and saute until tender (for about 5 minutes). Then add the grated mango and turmeric and mix well. Saute for 2 more minutes and mix to the rice. Add salt and mix well. Garnish with chopped coriander/cilantro and serve hot with curds or papad.
Can be refrigerated for 1 day. Re-heat before serving.
